Is Cremello Chocolate ?

I could definitely just be missing something but I just used the Dark Chocolate herd helper and got a Cremello horse.

Is Chocolate (the named color) different that the chocolate gene (b/b)?
Is cremello a variation of chocolate (the color)?

No. You got a cremello variant of a chocolate palomino. It just has an extra copy of the gene.

Is Chocolate (the named color) different that the chocolate gene (b/b)? What gene(s) result in a horse's color being chocolate?

There are two types of chocolate in the game:
1. Chocolate Palomino - Documented Color - this is the color name you see in the Dark Chocolate herd helper usually. This is not one specific gene but a specific combination. It is based on a real life color and requires a horse to be red based (e/e) with two copies of sooty or s+ (sty/sty), one copy of dense phenomenon (DP) and only one copy of cream (Cr). With two copies of Cr they become cremello as you saw. If you were to remove that extra copy your horse would become a Chocolate Palomino.
2. Chocolate - Hypothetical Gene (b/b) - only shows on black based horses (E/e or EE). It is recessive and requires two copies to show. The word Chocolate also gets added to the horses color name so technically it is both a gene and a name. It converts black pigment into a chocolate brown color and is inspired the gene that turns black labrador retrievers into chocolate labs.
