Let’s see if I can get my photo to attach. Fingers crossed technology likes me today.
My mom taught me how to bake bread as a teen. And now as an adult, if I want more than just the 1 loaf she makes me at Christmas, I have to make my own. I don’t have a bread machine like my mom does so I browsed around online until I found a recipe that was similar enough to her Christmas cinnamon bread that I could make it without the machine. It’s great toasted with a cup of coffee :)
Here’s the recipe: https://www.food.com/recipe/worlds-best-cinnamon-raisin-bread-not-bread-machine-98867 -

We definitely didn’t make the most picture worthy desert but boy was it delicious and easy!
No bake chocolate eclair cake
My family has been making this for years. Best after a night in the fridge… and not likely to last long enough for photos!!

Here’s a recipe for what we do:

The picture does not do these Cashew Clusters justice, but they are always a hit! I got the recipe from my best friend, and these were made for a club of older women my family knows personally, who wanted a fun spread of treats for their book club.
https://ibb.co/FLm68MyV
Here is the recipe!
Items needed:
20 oz of cashews
(1) 1 bar of chocolate-flavored almond bark
(1) 11.5 oz bag of Nestlé milk chocolate chips
(1) 12 oz. Bag of Nestlé semi-sweet chocolate chips
(1) 8 oz bag of heath bits
Start by smashing and melting the almond bark bar
Then mix in all the chocolate chips and continue melting
Once melted ,add in the heath bits and cashews
Stir it all together until all the cashews are covered in chocolate
Plop the mixture on parchment paper
Let sit
Enjoy! -

Let’s see if I can post this correctly! (Took me about 8+ edits but here we go!)
Chai Spice Oatmeal Cookies:
Ingredients:
1 cup all-purpose flour
3/4 tsp. baking powder
1/2 tsp. baking soda
1/3 tsp. fine sea salt
3/4 tsp. cassia cinnamon powder
1/2 tsp. cardamom powder
1/4 tsp. ginger powder
1/8 tsp. clove powder
1/8 tsp. nutmeg powder
1 large egg + 1 egg yolk, room temperature (website also has vegan flax egg substitution instructions)
3/4 cup plus + 2 Tbsp. butter, softened (or vegan butter substitute)
1 cup sugar
1/4 cup, packed, light brown sugar
1 tsp. vanilla extract
2 1/2 cups organic old fashioned rolled oats
Directions found here: https://blog.mountainroseherbs.com/chai-spice-oatmeal-cookies
I added about 1/8 tsp. of turmeric powder just to see how it would taste. I didn’t notice any flavor change at that amount but it did give them a more “golden” color?
They’re massive cookies if you go with the recommended 2 Tablespoon dough drops!

Omg yum! I can’t wait to make these!

Ok, I'm not really in the mood to bake however I make this treat for myself and I feel like it's better than cookies or donuts!
Cinnamon, honey butter biscuits.
I'm swamped in life and don't have time at the moment however these are fast and incredibly tasty. Better than cookies or donuts in my opinion (yes, I said it twice).
I use 1:1 butter and honey and then sprinkle in cinnamon until it is speckled. Spread on to biscuits and heat. Enjoy.

It tastes far better than it looks!
PS
My note says Merry Christmas haha, sorry for the poor handwriting. -
Today I made myself a little savory snack bowl with peanuts, raisins, walnuts, hazelnuts and dried plums. The dried plums are homemade from our own plums and a few of the hazelnuts (those that look lighter in the photo) are also "homemade" from our own garden.
Recipe:
Put savory snacks in a bowl and enjoy. Variety is healthiest!
Bonus recipes:
How to dry plums (aka. make prunes):
pick or buy ripe plums.
cut them in half to take out the pits.
dry them at a low heat in the oven until they have the dryness you want.
the drier they are the longer they store.
How to hazelnuts:
only pick the nuts that let go when you try to twist them off.
discard any with little holes in them (those got grubs.)
leave in a dry airy spot and forget about them for several months until they look brown. Expect some lil grubs to emerge because you didn't sort them well enough, they're harmless just yeet them.
discard any nuts with new holes from emerged grubs.
crack open the nuts you want to eat and discard any that look off.

I made Pecan Squares! Sometimes called "Pecan Pie Bars":

This is a recipe from my childhood - not sure where it came from originally, I think my mom found it somewhere or a friend gave it to her!
Ingredients:
For crust:
3 C. (360 g) All purpose flour
1/4 C. Sugar
3/4 C. Butter, softened
3/4 tsp salt
For filling:
4 eggs lightly beaten
1 1/2 C. Sugar
1 1/2 C. Corn syrup
3 Tbs melted butter
1 1/2 tsp vanilla
2 1/2 C. Chopped pecans (I'm trying to dial in a weight for these because it's easier to weigh first then chop, I tried 265 g this time and next time will probably do more like 280g because I think they could have been a little more nut dense)
Preheat oven to 359 & grease jelly roll pan* and/or line completely with parchment paper, make sure you get the edges too
(*my recipe card says jelly roll pan but I use a baking sheet with a 3/4 inch lip that is 11.25 in x 17.25 in, I think a classic jelly roll pan is a little deeper but not as long)
Mix crust ingredients in mixer until crumbly. Press into pan with your hands. Bake the crust for 15 mins (*once I skipped the pre-bake by accident and my husband liked them even more that way for what it's worth)
While crust is baking beat eggs, sugar, corn syrup, melted butter and vanilla until well blended.
Add chopped pecans and stir to mix.
Pour pecan mixture on top of baked crust and bake an additional 25 mins. I like to rotate the pan halfway through because my oven both heats unevenly.
Cool completely and cut into squares.

My favorite holiday candy is also the easiest if you can find pre-crushed candy canes.
Ingredients:
-Good white chocolate cut into small pieces if not using chips
-Crushed peppermint candy canes
Measure equal amount of good white chocolate and crush peppermint candy canes into two separate bowls. I used 1 1/3 cups of each and got about 25 pieces.
Make sure white chocolate is in a microwave safe bowl. Microwave in short 15-30 second amounts, stirring in between until chocolate is melted.
When fully melted, fold in crushed candy canes.
Scoop Tablespoon amounts on parchment paper. They will firm up at room temp if its not too warm, other wise place in freezer for 10 minutes.

Not a cookie.. buuuut...
This is the cake I am asked to mske for Christmas by my parents. (Sometimes for a birthday.. lol) It's best right when it's finished with a glass of milk. *chef kiss* I usually throw in more pecans. (1 Cup total)
Best Chocolate Cake
Ingredients
2 cups all-purpose flour
2 cups sugar
1/4 tsp. kosher salt
1 cup butter
4 Tbsp. (heaping) cocoa powder
1 cup boiling water
1/2 cup buttermilk
2 eggs, beaten
1 tsp. baking soda
1 tsp. vanilla extract
Icing
1/2 cup plus 6 Tbsp. butter
4 Tbsp. (heaping) cocoa powder
6 Tbsp. milk
1 tsp. vanilla extract
1 lb. (minus 1/2 c.) powdered sugar
1/2 cup finely chopped pecans
Directions
1. In a mixing bowl, combine the flour, sugar, and salt.
2. In a saucepan, melt the butter. Add the cocoa, stirring to combine. Add the boiling water and allow the mixture to boil for 30 seconds; turn off the heat. Pour the cocoa mixture over the flour mixture, and stir lightly to cool.
3. Pour the buttermilk in a measuring cup and add the beaten eggs, baking soda, and vanilla. Stir the buttermilk mixture into the butter/chocolate mixture. Pour into an 18-by-13-inch sheet cake pan and bake at 350°F for 20 minutes.
4. While cake is baking, make the icing: In a saucepan, melt the butter. Add the cocoa, stir to combine, and turn off the heat. Add the milk, vanilla, and powdered sugar, stirring together. Add the pecans, stir together, and pour over the warm cake. Cut into squares, eat, and totally wig out over the fact that you've just made the best chocolate sheet cake. Ever.

Question. Do mango floats count? I know it's more of a dessert but we do sometimes have it for merienda.Mesa: #26941 (Sol844)
-
so i'm partially dutch, my mothers Australian my dads from the Netherlands, i live in Australia despite having alot more family in the nl.
but i plan to learn the language and hope to be able to have more fluent conversations with my nl family, having learning difficulties makes it a bit difficult, but ykno whats a language everyone can speak? food. speculaas have been a frequent treat in my house (along with de ruijter sprinkles), and we usually get the store bought stuff. but this years been a rough one, so i wanted to bake them for my friends and family, especially since some of them wont be home for Christmas (classic Australia fifo)
i got a recipe from this source, thedutchbakersdaughter i pretty much had all the spices except for white pepper, and i had to hand grind the nutmeg and cloves (Woe)
annnd for whatever reason the local Coles only had, dinosaur shaped cookie cutters, but i thought that was objectively hilarious.
so cue, dinosaur themed speculaas, they taste great but a little bit non traditional.
i hope the note is enough proof, i kinda forgot had already packed away the biscuits for later and had to scramble to take photos before my family ate the last of the ones that were left out.

Merry Christmas!
One of my favorite dessert is Mango Float. I went home from college just in time to make it. Adjustments possible to fit your taste buds. If you want it creamier you could always use more milk or whip it lightly to make it fluffy. Still thinking of another recipe to share in bluegrass
Mango Float
Ingredients:
Graham Cracker
1 kilo mangoes
1 can condensed milk (374 g)
1/2 can evaporated milk (180 mL)
2 cartons All-purpose Creamer (250 mL each)
Steps:
Mix milk and creamer in a bowl.
Peel mangoes, and slice thinly.
Layer ingredients. Thin layer of milk, a layer of crackers, alayer of mangoes, another layer of milk, a layer of cracker, repeat.
Add, crushed crackers as toppings (optional).
Freeze, overnight or until it hard.
Can make 2 pans (the ones we used and 2 small containers.

I still can’t figure out how to post my pictures!!!!
Anyway, we made these to give to our neighbors this year (and some for ourselves too
I actually don’t know where we got the recipe from. All I know is that it’s a family favorite!
Currant Buns
Ingredients:
• 1/2 cup lukewarm water
• 1/2 cup Granulated sugar
• ½ tsp. active dry yeast
• 1 cup sourdough discard
• 4 ½ - ¾ cups all-purpose flour
• 1/2 tsp. salt
• 3/4 cup warm milk
• 1/4 cup butter, melted
• 2 eggs
• ½ - ¾ cup currants (or raisins)
• 2 tbsp. powdered sugar (for glaze)
• 1 tbsp. water (for glaze)
Instructions:
1. In the bread machine, combine the ½ cup warm water, the ½ cup sugar, and the yeast.
Let sit for 2 minutes.
2. Add the sourdough discard, warm milk, melted butter, eggs, and raisins.
3. Add 4 cups of flour, and ½ tsp. salt.
4. Set the bread machine on the "dough cycle" and start the machine.
5. Once the dough cycle has been completed, and the dough has doubled in size, remove it from the machine & shape into buns. Place them onto a parchment lined tray, cover with a tea towel, and let rise about 30 minutes, or until doubled in size.
6. Bake in 400-degree oven for 15 minutes or until golden brown. Stir together the powdered sugar and water. Brush it over the warm buns.
Enjoy! -
