Could you age up the horses during the rollover/server downtime? It would help to prevent such issues.

I have a couple ideas that could solve the issue without blocking the game for several hours:
1. Disable showing until all the horses aged up
2. Calculate points based on the server year instead of horse age. Looks like you already have this data in the system.

This issue is frustrating because while the game time shows midnight and a new day (and a year in this particular case), you only get HB payout at 3am game time and somewhere in between (or maybe later?) the actual rollover happens (based on when horses lose their pasture bonus. and when competitions count toward the new year). So between the game midnight and some time later (we don't know exactly how long) it's risky to do normal activities, like moving horses from pastures to show or to show in general because it's a competitive game and your horse might miss on its points this year.
