Is there so much luck involved?

I am a newer player and I am filling up my barn hard. But I am still very very unsure about the breeding part.
I went out of my way to search for very nice crosses, and yesterday evening I made about 20 with all red mares x B stallions and literally all but one were: 'this is not a very good foal for this cross'.
Now I have a mare which should be a 'good' producer with a stallion that is 'exceptional' and they still give me: 'this is not a very good foal'. Aaaaaaaaaaaaaa..... Am I doing something wrong? Is it too late in the season? Or is it just luck based?

I noticed you have a premium upgrade. Are you using normal breeding advice or Strict breeding advice. Are you using live cover? Those are the worst odds of ways you can breed.
20 is an abnormally large number of foals to not get any that pass breeding advice though.

Yes I used live cover. I did see an option for AI but I didn't know that would change anything? Or is it only pastures that give a boost?
I see people talking about double boosted stallions. Should I boost a stallion and use pasture breading for the best results?
I got lucky with a rank special Herd helper and I want to breed the mare today but now I am kinda lost. -
From worst to best odds of a good foal
Live Cover
Any Form of AI (like straws), or mares in pasture with 15 days of bonus
Mares in pasture with 30 days of bonus
Embryos being implanted into mares with 30 days of pasture bonus
Are you using normal breeding advice or strict breeding advice? Stick to normal if you want to get more intact foals. Just switching to using straws instead of live cover will help bump your intact foal rate.
Boosting does not cause you to have more intact foals. It increases the raw ability of the horse. It's generally a bad investment to get into boosts early on as they are most powerful for cap quality leaderboard prospects.Need to contact me? Read this first.

What is your breeding goal? Do you want to breed the most recent season or the highest possible pointed foals?
You still have a few hours left to get more foals.
If I were you I would flush the mare that you like (if she passed SBA), make some embryos using your rank spcial stallion and do embryo transfer, this way you would get the highest chance possible in your current setup. -
Embryos on mares with no pasture bonus have the exact same chance to produce intact foals as just using straws and straws are a lot cheaper.

So... This is going to be my first full month. I have to put my mares in the pasture today? So next month they have a pasture bonus and if they didn't have a foal I can use them as recips? Meaning I have to have 1 pasture for mares with a stallion and 1 pasture for recips for ET?

You certainly don't have to have two pastures if you don't want too. It is up to you how much you want to work to increase your intact foal rate.
I am working on an FAQ entry about creating intact foals. It's not done yet but you may find this section helpful

The type of breeding method you select has a big impact on the number of intact foals you can expect. If you have two perfect foundation parents you can expect the following intact rates after testing. Other crosses will have different rates but still follow the general trends.
Cap quality foals always pass both forms of breeding advice tests.
Natural Breeding
Natural breeding includes live cover, done from the horse’s breeding tab, and pasture breeding, done from your pasture page. Mares, if left in pasture, will gain a bonus that increases by a small amount every day. You can breed your mares in the pasture at any time but they reach the maximum bonus at 30 days. For the best bonus leave them in as much as possible.
Live Cover or Pasture Breeding with 0 Days: 66% of foals will fail breeding advice, 33% will pass.
Pasture Breeding with 15 days: 57.5% of foals will fail breeding advice, 42.5% will pass.
Pasture Breeding with 30 days: 10.75% of foals will fail breeding advice, 89.25% will pass.
Artificial Breeding
These breeding methods require veterinary intervention and are accessible to members with basic or premium upgrades. (Remember you can purchase a basic upgrade with HBs!) Breeding using straws requires collecting the stallion from the breeding tab, then using the straw on the mare of your choice. Embryos can be created directly on the mare’s breeding tab for basic members, or using eggs for premium members. Embryos are then inserted into a surrogate mare (from the sire or dam’s page). The number of days the surrogate mare has been in a pasture also improves the foal odds.
Breeding Via Straw: 57.5% of foals will fail breeding advice, 42.5% will pass.
Embryo with 0 pasture day surrogate: 57.5% of foals will fail breeding advice, 42.5% will pass.
Embryo with 15 pasture day surrogate: 10.75% of foals will fail breeding advice, 89.25% will pass.
Embryo with 30 pasture day surrogate: 100% will pass.
